Kaiserschmarrn

Kaiserschmarrn is a traditional Austrian dish popular here in Bravia as well. Very common thing kids would ask for at a hütte while taking a break from skiing.

Ingredients

  • Rum soaked raisins, Amaretto also works
  • Shaved almonds
  • Milk 3.8%+, enough for proper texture
  • 5 Eggs
  • 25g white sugar
  • Powder sugar
  • Vanilla extract or vanilla sugar
  • Salt
  • 120g 405 flour
  • Baking Powder
  • Butter
  • Apple sauce / plum preserves for serving
  • Apple cider vinegar

Instructions

  1. Combine raisins and rum in cup and let them absorb for ~30min.
  2. Make batter by mixing milk, flour, eggs, baking powder, but of apple cider vinegar,
  3. Roast almonds in wok without butter for ~3min.
  4. Add butter and fry almonds for a few seconds letting the butter melt and cover the pan.
  5. Add batter to pan
  6. Add raisins one by one throwing them so then land in the middle of the pancake.
  7. After bottom has cooked move pan to oven at 180 for five to ten minutes.
  8. Take out of oven and flip the pancake, then let cook more.
  9. Break up pancake, add more butter to pan, dust with powder sugar, and fry.
  10. Make space in center and add Rum/Amaretto and flambe
  11. Serve with Apple sauce / plum preserves and a final dusting of powder sugar.
