Kaiserschmarrn
Kaiserschmarrn is a traditional Austrian dish popular here in Bravia as well. Very common thing kids would ask for at a hütte while taking a break from skiing.
Ingredients
- Rum soaked raisins, Amaretto also works
- Shaved almonds
- Milk 3.8%+, enough for proper texture
- 5 Eggs
- 25g white sugar
- Powder sugar
- Vanilla extract or vanilla sugar
- Salt
- 120g 405 flour
- Baking Powder
- Butter
- Apple sauce / plum preserves for serving
- Apple cider vinegar
Instructions
- Combine raisins and rum in cup and let them absorb for ~30min.
- Make batter by mixing milk, flour, eggs, baking powder, but of apple cider vinegar,
- Roast almonds in wok without butter for ~3min.
- Add butter and fry almonds for a few seconds letting the butter melt and cover the pan.
- Add batter to pan
- Add raisins one by one throwing them so then land in the middle of the pancake.
- After bottom has cooked move pan to oven at 180 for five to ten minutes.
- Take out of oven and flip the pancake, then let cook more.
- Break up pancake, add more butter to pan, dust with powder sugar, and fry.
- Make space in center and add Rum/Amaretto and flambe
- Serve with Apple sauce / plum preserves and a final dusting of powder sugar.
