Password Login Cooking Note Editor Editing note: kimchi Back to note Title Description Slug Markdown Content My first attempt at making Kimchi ## What - 2 tbsp chili powder - 1 tbsp sugar - 1 tsp fish sauce - 15g garlic - 10g ginger - half a carrot - two sticks green onion - head of Chinese cabbage ## How 1. Chop cabbage up, salt it, and put it in a bowl and leave it overnight / 24hr. Covered with towel. 1. Combine ginger, garlic, chili powder, fish sauce, and bit of water in food processor. Blend until smooth. 1. Chop green onion into ~2cm pieces and julian carrot. 1. Wash cabbage to remove excess salt. 1. Combine everything in a bowl and mix by hand. 1. Prep glass jar for fermentation, 135C 20min in oven. 1. Add mix to jar. 1. Let rest at room temp ~24hr. 1.
