Kimchi
My first attempt at making Kimchi
What
- 2 tbsp chili powder
- 1 tbsp sugar
- 1 tsp fish sauce
- 15g garlic
- 10g ginger
- half a carrot
- two sticks green onion
- head of Chinese cabbage
How
- Chop cabbage up, salt it, and put it in a bowl and leave it overnight / 24hr. Covered with towel.
- Combine ginger, garlic, chili powder, fish sauce, and bit of water in food processor. Blend until smooth.
- Chop green onion into ~2cm pieces and julian carrot.
- Wash cabbage to remove excess salt.
- Combine everything in a bowl and mix by hand.
- Prep glass jar for fermentation, 135C 20min in oven.
- Add mix to jar.
- Let rest at room temp ~24hr.
- Enjoy and refrigerate after.
Results
Not spicy enough.
