Kimchi

My first attempt at making Kimchi

What

  • 2 tbsp chili powder
  • 1 tbsp sugar
  • 1 tsp fish sauce
  • 15g garlic
  • 10g ginger
  • half a carrot
  • two sticks green onion
  • head of Chinese cabbage

How

  1. Chop cabbage up, salt it, and put it in a bowl and leave it overnight / 24hr. Covered with towel.
  2. Combine ginger, garlic, chili powder, fish sauce, and bit of water in food processor. Blend until smooth.
  3. Chop green onion into ~2cm pieces and julian carrot.
  4. Wash cabbage to remove excess salt.
  5. Combine everything in a bowl and mix by hand.
  6. Prep glass jar for fermentation, 135C 20min in oven.
  7. Add mix to jar.
  8. Let rest at room temp ~24hr.
  9. Enjoy and refrigerate after.

Results

Not spicy enough.
