Banana Pancakes
Quick and easy breakfast meal.
Ingredients
Simply one egg per banana then flour until correct consistency.
- 3 bananas
- 3 eggs
- Oat flour, 75% of flour
- Gluten free flour, 25% of flour
- Baking powder
- Coconut oil
- Blueberries
- Maple syrup
TLDR Instructions
#1. Preheat oven to 90 Deg C
#2. Mash bananas in large mixing bowl
#3. Preheat coconut oil in skillet with on medium heat
#4. Whisk in eggs
#5. Whisk in flour + baking powder
#6. Pour pancakes into skillet and start frying
#7. Press blueberries into cakes
#8. Transfer cakes to oven to keep warm after frying
#9. Serve with Maple syrup

Step one wake up.
Step two stumble to kitchen and turn on oven to 90 deg C.
This is a good start to any morning.
Next grab two bananas and mash them up in a large bowl. As long as they are not green they will taste good.
A scoop of coconut oil goes in a pan on medium heat.
Then oat flour, gluten-free flour, baking powder, and two eggs get whisked into the banana slurry.
Batter is ready so time to pour some pancakes. Smaller ones get more crispy. Two blueberries pressed into each.
Soon they cakes are brown and the blueberries will have broken spilling their delicious juice into each bite.
