Banchan

Korean Side dishes. They work well for workday lunches. Prepare a few on the weekend and then just combine with some Jasmin rice for lunch.

Chili Crisp Mayo Chicken

  • Chili Crisp, few spoons
  • Chicken, salt and pepper and sous vide for 2h at 63C
  • Mayo, as needed

Just cube the chicken and combine with chili crisp and mayo.

Fried Tofu

Use pressed tofu, water soak, core starch coat, fry..

Carrots

  • Carrots, julienned
  • Water
  • Sesame oil, just a bit

Add carrots, oil, and water to hot pan. Cook ~15min, adding water as needed so the carrots don't pick up any color and end up nice and soft.

Spinach

Radish (Musaengchae)

  • radish, 1 big one
  • teaspoon salt
  • green onions, 1-2
  • gochugaru, 2 tbsp
  • garlic, 2 tsp minced
  • ginger, 1/2 tsp grated
  • fish sauce 1 tbsp(myulchi aekjeot) or saeujeot (salted shrimp)
  • sugar, 1tsp
  • sesame seeds, 1tsp

Cucumber (Oi Muchim)

What

  • small cumbers, 5-6, thinly sliced
  • minced garlic, tsp
  • go to Garo, tbsp
  • white vinegar, tbsp
  • toasted sesame seeds, tbsp
  • sugar, tbsp

How

  • Sweat the cucumbers with salt for ~20 min
  • drain away water and rinse to desired salt level
  • ring out excess water
  • add everything to mixing bowl and stir like folding dough

Myeolchi Bokkeum (멸치볶음)

I bought some frozen dried anchovies for making soup, but it seems they can also be used to make a Banchan.

What

Common:

  • 3 ounces (1 cup packed) small size myeolchi 멸치, (dried anchovies)
  • 1 tablespoon cooking oil

Sweet and Savory Version:

  • 1/2 tablespoon soy sauce
  • 2 tablespoons rice wine or mirin
  • 2 teaspoons sugar (or less to taste)
  • 1 tablespoon Oligo syrup or corn syrup (or honey) Honey is sweeter so use less
  • 3 plump garlic cloves (or more)
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds

Sources:

Ground Beef

  • ground beef, 250g
  • sesame seeds, pinch
  • Japanese soy sauce, 2 tbsp
  • sugar, 1.5 tbsp
  • sesame oil, drop
  • garlic, 1 clove, minced
  • pepper

Let marinade for 10 - 45min then pan fry
