Biscuits

Little southern home kitchen goodness.

Ingredients

  • 7g dry yeast
  • 10g sugar
  • 2 tablespoons warm water
  • 240g flour
  • 10g baking powder
  • 1g baking soda
  • pinch salt
  • 120g shortening
  • 260g buttermilk

Instructions

  • Preheat oven to 215C
  • Sprinkle the yeast and the sugar over the warm water in a small bowl.
  • In a larger mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Use a fork or a pastry cutter to cut the shortening into the flour mixture (it should look like fine crumbs).
  • Add the yeast-sugar mixture and the buttermilk to the bowl. Stir until ingredients are mostly sticking together a cohesive dough (some crumbles are okay, see photo in post). Press the dough with your hands to about 1/4-inch thick (maybe even a little thicker if you want).
  • Cut with biscuit cutter and place on a baking sheet. Bake for 10-12 minutes and brush the tops with melted butter.
