Fried Rice
My restaurant style fried recipe.
The rice
- Two parts long grain
- One part Jasmin
Eggs
- 2 Eggs for scrambling
- Season with pinch of salt and pinch of MSG
Chicken
- cut into thin strips
- wash 30sec cold water
- the strips and hand press dry
- mix in baking soda
- soy sauce light
- sugar
- corn starch
- msg
- salt
- min 15min in fridge
Veggies
- Frozen peas
- Onion
- Garlic
- Carrot
Sause
- 2g sugar
- 2 light soy sauce
- 0.5 dark soy sauce
Dry Spices
- Salt
- White Pepper
- MSG
Deglaze
Asian cooking wines can be a bit confusing. The video calls Shaoxing Huadiao, which I was unable to find here in DE. I ended up with Shaoxing Jiafan wine which I think is just an aged version of Shaoxing Huadiao.
