Fried Rice

My restaurant style fried recipe.

The rice

  • Two parts long grain
  • One part Jasmin

Eggs

  • 2 Eggs for scrambling
  • Season with pinch of salt and pinch of MSG

Chicken

  • cut into thin strips
  • wash 30sec cold water
  • the strips and hand press dry
  • mix in baking soda
  • soy sauce light
  • sugar
  • corn starch
  • msg
  • salt
  • min 15min in fridge

Veggies

  • Frozen peas
  • Onion
  • Garlic
  • Carrot

Sause

  • 2g sugar
  • 2 light soy sauce
  • 0.5 dark soy sauce

Dry Spices

  • Salt
  • White Pepper
  • MSG

Deglaze

Asian cooking wines can be a bit confusing. The video calls Shaoxing Huadiao, which I was unable to find here in DE. I ended up with Shaoxing Jiafan wine which I think is just an aged version of Shaoxing Huadiao.
