Chashu

Every Raman needs a good meat. My go-to is Chashu made in an Instant Pot.

Ingredients:

  • 2 Pounds Skinless Pork Belly, cut into two pieces
  • 3 Green Onions, cut into thirds
  • 2 inch Fresh Ginger, peeled and cut into slices
  • ½ Cup Sake
  • ½ Cup Japanese Soy Sauce
  • ⅓ Cup Sugar
  • ¾ Cup Water
  • 1 Tablespoon neutral tasting Vegetable Oil

Steps:

  • Sauté on High with bit of olive oil sear fat side down first ~10min total
  • Pressure cook on high for 65min with natural release
  • Refrigerate min 6 hours
  • Pan fry slices before serving
