Portokalopita Phyllo Cake

What

  • 214g / 1 cup sugar
  • 4 3-inch strips orange zest
  • 0.5 cup orange juice (how many ml?)
  • cinnamon stick
  • 2 cardamom pods, lightly smashed
  • 3 bay leaves
  • 227g / 8 ounces phyllo, thawed
  • 214g / 1 cup sugar
  • half an orange orange zest
  • 240g / 1 cup whole-milk Greek yogurt
  • 1 cup neutral oil
  • 5 large eggs
  • 1 tablespoon baking powder
  • 1/4 teaspoon table salt

How

  1. Prep Phyllo
    • Take the phyllo out of the packaging, removing the baking paper, and roll it length wise.
    • Cut roll every 1.5cm
    • Unravel on large baking sheet
    • Bake for 15min at 180C
  2. Prep Syrup
    • Add sugar, orange strips, bay leaves, and cardamon pods to a small pod and bring to a simmer
    • Once everything is dissolved pour into beaker and let cool
