Shokupan - Japanese Milk Bread Loaf

Delicious Japanese milk bread.

What

  • Bread flour (550 for proper protein amount) for Yudane, 50g or 20%
  • Hot water for Yudane, 40g/ml or 16%
  • Bread flour, 200g or 80%
  • Milk, 150g/ml or 60%
  • Sugar, 15g or 6%
  • Instant dry yeast, 3g or 1.2%
  • Butter, unsalted, 10g or 4%
  • Salt, 5g or 2%

How

  • Night before make Yudane with boiling water and 550 floor. Flour to water ratio of 1 to 0.8

Ratio

The original recipe uses a 10 x 20 x 9cm pan.
