Shokupan - Japanese Milk Bread Loaf
Delicious Japanese milk bread.
What
- Bread flour (550 for proper protein amount) for Yudane, 50g or 20%
- Hot water for Yudane, 40g/ml or 16%
- Bread flour, 200g or 80%
- Milk, 150g/ml or 60%
- Sugar, 15g or 6%
- Instant dry yeast, 3g or 1.2%
- Butter, unsalted, 10g or 4%
- Salt, 5g or 2%
How
- Night before make Yudane with boiling water and 550 floor. Flour to water ratio of 1 to 0.8
