I've been very sick lately. Today I'm in the mood for some cure all chicken soup. Serious Eats never disappoints, great articles / recipes! Here are my notes so far:

Planning on using pressure cooker for the broth.

First attempt at a ginger bug was a complete fail. After a week of feeding and then three days to carbonate a fruit syrup no luck.

Perhaps the German bio ginger didn’t have enough yeast. Will try again with help of wine yeast.

Chipped my Gyuto 😢.

First chip in ~3 years of hard steel Japanese knife ownership. Not bad.

Airport security, "What are those solid black bars on the xray?". Oh my Japanese whetstones I take on vacation to sharpen kitchen knives everywhere I stay.

Things I wish I knew about knife sharpening years ago:

- Skip the cheap Amazon no name whetstones and get Naniwa Basic double sides stones. 400x1000 and 1000x3000. 1000 will be the most used.
- The Naniwa stones need a lot of warming up before initial use, so steel plate and carbon powder 60 and 180. Also used to keep stones flat, though they wear super slow.
- Store the steel plate somewhere super dry to avoid rust.

“You only need 25 recipes to be a great cook” -Chris Kimball

I connect with this. As I learn to cook more and get repetition on my favorite recipes, making small tweaks, 25 is a nice goal.

Loving Chili Crisp. I went from seeing it so many recipes and thinking it is probably too hot 🥵 for me, to putting it on everything.

The Bear season one. It opened too chaotic for me but I stuck with it and enjoyed. Smile every time I see a cooking instrument I own, like: deli containers or micro plane.

Looking forward to season two.

Made quick lunches for my 8 month old. Veal carrot packs you can just throw in hot water for a couple of min. Just need some sort of carbs to go with it.
